APPETIZER DEEP FRIED BEEF MEATBALLS
Ingredients
- 4 tablespoon unsalted butter
- 1/2 pound ground beef
- 1/4 cup carrot finely diced
- 1/2 cup red onion finely chopped
- Salt and freshly ground black pepper to taste
- grating fresh nutmeg
- 1 tablespoon fresh lemon juice
- 2 tablespoons parsley finely chopped
- 5 tablespoons all-purpose flour
- 1 cup beef broth
- 1/2 cup dry bread crumbs
- 1 egg beaten with 1 teaspoon water
- Oil for deep frying
Instructions
- Heat one tablespoon of the butter in a large skillet over moderate heat.
- Cook beef, carrot, and onions until beef is browned and carrots are tender.
- Drain meat in a colander then place in a mixing bowl. Add salt, pepper, nutmeg, lemon juice and parsley and stir to combine then set aside.
- Heat remaining 3 tablespoons butter in a saucepan over moderate heat.
- Stir in flour to make a roux then cook for 3 minutes and add beef broth. Continue heating stirring constantly until sauce boils and becomes thick. Combine sauce with meat mixture stirring to combine thoroughly.
- Chill this mixture at least two hours until it becomes solid.
- When mixture solidifies, roll into 1” balls using your hands. Roll balls in the bread crumbs then in the egg and water mixture then again in bread crumbs.
- Fry a few at a time in a deep fryer with at least 2 inches of oil at 375 for 2-3 minutes.
- Drain on paper towels and serve immediately.
