APPETIZER DEEP FRIED BEEF MEATBALLS

Ingredients

  • 4 tablespoon unsalted butter
  • 1/2 pound ground beef
  • 1/4 cup carrot finely diced
  • 1/2 cup red onion finely chopped
  • Salt and freshly ground black pepper to taste
  • grating fresh nutmeg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons parsley finely chopped
  • 5 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1/2 cup dry bread crumbs
  • 1 egg beaten with 1 teaspoon water
  • Oil for deep frying

Instructions

  1. Heat one tablespoon of the butter in a large skillet over moderate heat.
  2. Cook beef, carrot, and onions until beef is browned and carrots are tender.
  3. Drain meat in a colander then place in a mixing bowl. Add salt, pepper, nutmeg, lemon juice and parsley and stir to combine then set aside.
  4. Heat remaining 3 tablespoons butter in a saucepan over moderate heat.
  5. Stir in flour to make a roux then cook for 3 minutes and add beef broth. Continue heating stirring constantly until sauce boils and becomes thick. Combine sauce with meat mixture stirring to combine thoroughly.
  6. Chill this mixture at least two hours until it becomes solid.
  7. When mixture solidifies, roll into 1” balls using your hands. Roll balls in the bread crumbs then in the egg and water mixture then again in bread crumbs.
  8. Fry a few at a time in a deep fryer with at least 2 inches of oil at 375 for 2-3 minutes.
  9. Drain on paper towels and serve immediately.
