Core Beef, Mushroom, and Barley Soup 6 Points

Ingredients

  • 1 pound beef top round cut into 1“ cubes, all fat removed
  • 3/4 cup pearl barley
  • 2 14.5 ounce cans Beef broth
  • 3 cups Water
  • 3 each carrot chopped
  • 2 each Onion chopped
  • 3 stalks celery chopped
  • 1 1/2 teaspoons Salt
  • 1/4 teaspoon Pepper
  • 1 1/2 cups butter beans
  • 1 1/2 cups fresh mushroom sliced
  • 2 teaspoons garlic minced, for braising meat
  • 1 tablespoon Garlic minced

Instructions

  1. Crock pot method: Spray pot with non-stick cooking oil. In sauce pan, spray with cooking spray and add 2 teaspoons of minced garlic; braise the top round just to coat. Combine all ingredients in crockpot and cook on high for 1 hour and set to low for 7 hours..
