Beef Bundles (Garden Fresh Salads & Vegetables)

Ingredients

  • 1/4 lb fresh green beans
  • 2 medium carrots cut into 3-inch long matchstick pieces about 40
  • 1 medium jicama cut into 3-inch long matchstick pieces about 40
  • 1/2 cup oil
  • 1/3 cup red wine vinegar
  • 1 tablespoon fresh basil chopped
  • 2 garlic cloves crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 lb roast beef thinly sliced cut into 1x4 inch strips about 40

Instructions

  1. Blanch green beans in boiling water for 2 minutes. Add carrots and jicama; blanch 1 to 2 minutes longer or until vegetables are crisp-tender. Drain. Immediately plunge vegetables into ice water for 1 minute; drain. In medium bowl, whisk together oil, vinegar, basil, garlic, salt and pepper. Add warm vegetables to dressing toss gently. Cover; refrigerate several hours or until well chilled.
  2. Wrap 1 beef strip around 1 carrot stick, 1 jicama stick and 1 green bean. Repeat with remaining beef strips and vegetables. Secure with wooden picks or green onion ties. Makes 40 bundles.
