Low-Fat Skillet Ground Beef and Vegetables

Ingredients

  • 1 teaspoon canola oil
  • 1 rib celery, sliced
  • 3/4 cup finely chopped onion
  • 3/4 cup sliced carrots
  • 3/4 cup green beans, trimmed
  • 3/4 cup mushrooms
  • 1 small zucchini, halved lengthwise and sliced
  • 1 teaspoon oregano
  • 8 ounces extra-lean ground beef
  • 1 (15-ounce) can chopped tomatoes
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Gather the ingredients.
  2. Heat oil in a large skillet over medium heat.
  3. Add celery, onion, carrots, green beans , mushrooms, and zucchini and sauté for 2 to 3 minutes. Add oregano and stir to combine.
  4. Crumble in ground beef and cook, stirring, until no longer pink, about 5 to 7 minutes. Carefully drain off any excess fat.
  5. Add canned tomatoes and Worcestershire sauce and mix to combine evenly. Simmer for 20 minutes.
  6. Serve in individual bowls. Enjoy!
