Orange Beef Stir-Fry

Ingredients

  • 12 ounces Beef top round steak Thinly sliced
  • 1 teaspoon Orange zest Finely shredded
  • 1/2 Cup Orange juice
  • 1 tablespoon Cornstarch
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sugar
  • 1 Beef bouillon cube
  • 4 Green onions Bias cut to 1 inch
  • 1 Clove Garlic Minced
  • 5 Cups Fresh spinach Torn
  • 1/2 (8 ounce) can Water chestnuts Drained
  • 3 Cups Cooked brown rice

Instructions

  1. Trim fat from beef then thinly slice beef across the grain into bite size strips. Set aside. For sauce, in a small bowl, stir together orange peel, orange juice, cornstarch, soy sauce, sugar, and bouillon.
  2. In a wok or large skillet heat 1 tablespoons oil over medium- high heat. Add green onions and garlic and cook and stir for 1 minute. Remove add 1 tablespoon oil and add beef. Cook and stir for 2-3 minutes or to desired doneness. Push beef from center of the pan.
  3. Stir and add sauce to the center of wok. Cook and stir until thickened and bubbly. Return green onions, add spinach and water chestnuts. Stir all ingredients together to coat with sauce. Cover and cook 1 minute more or until heated through. Serve immediately over hot cooked rice.
