Beef & Mushroom with Mashed Potatoes

Ingredients

  • 1 pound Red potatoes mashed
  • 1 pound Ground beef
  • 1/2 pound Fresh mushrooms sliced
  • 1 medium Onion sliced
  • 3 tablespoons Flour
  • 3/4 teaspoon Pepper
  • 1/2 teaspoon Salt
  • 14.5 ounces Beef broth
  • 2 tablespoons Butter softened
  • 1/2 cup Half-and-half cream
  • 1/2 cup French-fried onions optional

Instructions

  1. 1. Boil potatoes to mash later (15 minutes)
  2. 2. In a large skillet, brown ground beef with mushrooms & onion over medium-high heat; drain
  3. 3. Stir in flour, pepper, & salt until blended well
  4. 4. Gradually stir in broth, bring to a boil
  5. 5. Reduce heat, simmer uncovered until thickened, about 5 minutes, stirring occasionally
  6. 6. Mash potatoes to desired consistency and add butter, cream, and salt/pepper to taste
  7. 7. Spoon potatoes in bowls, top with beef and sprinkle with fried onions
