Beef & Mushroom with Mashed Potatoes
Ingredients
- 1 pound Red potatoes mashed
- 1 pound Ground beef
- 1/2 pound Fresh mushrooms sliced
- 1 medium Onion sliced
- 3 tablespoons Flour
- 3/4 teaspoon Pepper
- 1/2 teaspoon Salt
- 14.5 ounces Beef broth
- 2 tablespoons Butter softened
- 1/2 cup Half-and-half cream
- 1/2 cup French-fried onions optional
Instructions
- 1. Boil potatoes to mash later (15 minutes)
- 2. In a large skillet, brown ground beef with mushrooms & onion over medium-high heat; drain
- 3. Stir in flour, pepper, & salt until blended well
- 4. Gradually stir in broth, bring to a boil
- 5. Reduce heat, simmer uncovered until thickened, about 5 minutes, stirring occasionally
- 6. Mash potatoes to desired consistency and add butter, cream, and salt/pepper to taste
- 7. Spoon potatoes in bowls, top with beef and sprinkle with fried onions
