Hamburger Steak with onion & mushroom gravy

Ingredients

  • 3 1/2 lbs Ground Beef 80/20 mix preferable
  • 1 small Onion Chopped fine
  • 3 cloves Garlic Chopped fine
  • 4 tsp Sea Salt
  • 2 tsp Fresh ground black pepper
  • 2 tbsp Worchestire Sauce
  • 2 tbsp Light Soy Sauce
  • 1 large Egg
  • 1 cup Bread crumbs
  • 3 tbsp Cooking Oil don’t use olive oil
  • 3 large Sweet Onions chopped or julienne
  • 16 oz Sliced Mushrooms Baby Bella preferable
  • 6 tbsp All purpose flour
  • 4 cups Beef stock
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Worcestershire sauce
  • 2 tsp Dried Thyme Leaves Substitute 10 fresh thyme stalks

Instructions

  1. In a large mixing bowl, spread out ground beef in bowl to make thin layer. Spread evenly the onion, garlic, sea salt, black pepper, Worcestershire, soy, and bread crumbs. Crack egg in bottom of meat mixture then gently mix meat mixture until all is incorporated, do not over work mixture. Heat oil in large heavy bottom skillet on med/high, form meat mixture into 7 patties of equal thickness. Cook patties on each side until browned well then remove from skillet. Reduce heat to medium, add onion and mushrooms, stir frequently to deglaze the skillet and cook onions and mushrooms until very soft and caramelized (at least 15 minutes). Note: can add 1/4 cup water at a time to clean the bottom of the skillet if needed while cooking onions / mushrooms. Once onions are very soft and caramelized, add flour and stir in well. After 2-3 minutes, slowly add beef stock, balsamic vinegar, Worcestershire sauce, and thyme. Stir well then cook on low heat (covered) for 5 minutes…stir well and adjust seasoning if needed at this point. Once seasoning is right, add meat back into gravy, spoon sauce over meat patties. Cover and cook 15 minutes then turn off and serve. Note: gravy can be thinned with additional beef stock or water in small quantities.
