Beef: fragrant stir fried beef with peppers

Ingredients

  • 500 grams lean steak
  • marinade
  • 1 tablespoon light soy sauce
  • 1 tablespoon shaoxing rice wine
  • 2 teaspoons Sesame Oil
  • 2 teaspoons cornflour
  • Stir fry
  • 3 stalks Lemon Grass crushed
  • 3 tablespoon Groundnut oil
  • 2 teaspoons finely chopped ginger
  • 100 grams shallot finely sliced
  • 3 Garlic cloves finely sliced
  • 2 Red peppers deseeded and cut into 2.5 squares
  • 1 tablespoon light soy sauce
  • 1 1/2 tablespoons shaoxing rice wine
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground black pepper
  • 1 1/2 teaspoons sugar
  • 2 teaspoons Sesame Oil

Instructions

  1. Cut the beef into thin slices against the grain. Put in a bowl with the stir fry ingredients
  2. Prep all veg, garlic etc
  3. Heat a wok or similar until very hot hot add the oil and when it’s smokey add the beef using a slotted spoon
  4. Stir fry for two mins and removed and set aside
  5. Pour off all but a tablespoon of oil. Add the lemongrass, ginger, shallots and garlic and stir fry for a minute. Add the peppers, soy sauce, shaoxing, salt, pepper and sugar and stir fry for 3 mins. Return the beef to the wok and stir fry for four mins. Add the sesame oil and stir through.
  6. Serve with noodles or rice as you prefer
