Beef: fragrant stir fried beef with peppers
Ingredients
- 500 grams lean steak
- marinade
- 1 tablespoon light soy sauce
- 1 tablespoon shaoxing rice wine
- 2 teaspoons Sesame Oil
- 2 teaspoons cornflour
- Stir fry
- 3 stalks Lemon Grass crushed
- 3 tablespoon Groundnut oil
- 2 teaspoons finely chopped ginger
- 100 grams shallot finely sliced
- 3 Garlic cloves finely sliced
- 2 Red peppers deseeded and cut into 2.5 squares
- 1 tablespoon light soy sauce
- 1 1/2 tablespoons shaoxing rice wine
- 1/2 teaspoon Salt
- 1/2 teaspoon Ground black pepper
- 1 1/2 teaspoons sugar
- 2 teaspoons Sesame Oil
Instructions
- Cut the beef into thin slices against the grain. Put in a bowl with the stir fry ingredients
- Prep all veg, garlic etc
- Heat a wok or similar until very hot hot add the oil and when it’s smokey add the beef using a slotted spoon
- Stir fry for two mins and removed and set aside
- Pour off all but a tablespoon of oil. Add the lemongrass, ginger, shallots and garlic and stir fry for a minute. Add the peppers, soy sauce, shaoxing, salt, pepper and sugar and stir fry for 3 mins. Return the beef to the wok and stir fry for four mins. Add the sesame oil and stir through.
