Warm Beef Salad
Ingredients
- 2 TBSP olive oil
- 1 lb boneless sirloin grilling steak
- 1/4 tsp salt and pepper
- 1.5 red onion Sliced
- 2 cloves garlic minced
- 1/2 tsp dried rosemary
- 1 TBSP red wine vinegar
- 2 tsp dijon mustard
- 1/4 tsp sugar
- 6 cups baby spinach
Instructions
- Heat oil over med-high heat. Sprinkle both sides of steak with S&P
- Cook 4 minutes / side - remove from heat and tent with foil for 5 minutes. Slice very thin
- Add garlic, onion, rosemary and remaining salt and pepper to pan - cook 4 minutes or until onion softens
- Meanwhile - in serving bowl, whisk together oil, vinegar, mustard and sugar.
- Add onion mixture, and spinach and toss.
- Arrange slices of steak on top.
