Warm Beef Salad

Ingredients

  • 2 TBSP olive oil
  • 1 lb boneless sirloin grilling steak
  • 1/4 tsp salt and pepper
  • 1.5 red onion Sliced
  • 2 cloves garlic minced
  • 1/2 tsp dried rosemary
  • 1 TBSP red wine vinegar
  • 2 tsp dijon mustard
  • 1/4 tsp sugar
  • 6 cups baby spinach

Instructions

  1. Heat oil over med-high heat. Sprinkle both sides of steak with S&P
  2. Cook 4 minutes / side - remove from heat and tent with foil for 5 minutes. Slice very thin
  3. Add garlic, onion, rosemary and remaining salt and pepper to pan - cook 4 minutes or until onion softens
  4. Meanwhile - in serving bowl, whisk together oil, vinegar, mustard and sugar.
  5. Add onion mixture, and spinach and toss.
  6. Arrange slices of steak on top.
