Slow cooked Irish Beef stew
Ingredients
- 2 sticks Celery
- 1 Onion
- 4 cloves Garlic
- 2 Carrot
- 1 tin chopped tomato
- 20 gram herb and mushroom seasoning
- 20 grams stock powder
- 4 Potato
- 10 gram mixed herbs
- 500 gram diced beef
- 40 gram red wine jus
- 1 jar Mustard
Instructions
- Thinly slice celery and onion. Chop garlic. Roughly chop carrot.
- In a medium bowl combine diced beef, 2tbs plain flour, and pinch salt and pepper.
- On saute mode in slow cooker cook celery and onion with a drizzle olive oil for 5 minutes. Transfer to a bowl. Brown beef with a drizzle olive oil for 4 minutes, transfer to a plate.
- Return celery and onion to the pot, and garlic and herb seasoning and cook for 1 minute.
- Add carrot, tin tomato, stock powder, red wine jus, 1 tsp brown sugar, 1 cup water, and the beef. Slow cook for at least 4 hours.
- Make mash potatoes with milk and butter, add some mustard for taste.
- Sprinkle herbs over when serving.
